Oh my, the things you can do with Marzipan!!!!!
Country Woman Magazine contacted me about doing an article for the fall/winter issue 2001 of their magazine using Marzipan as the medium. Having used Marzipan in the past I thought it would give me a chance to play with this dough as a medium. A time to just see how many things can be done - and  how many techniques can be used with this dough.

I found it to be a very workable medium and it can be combined with fondant or gumpaste for a tastier sugar medium. Here is the recipe I found to be very tasty and easy to make.

Marzipan

1 Cup almond paste
2 tablespoons white Karo syrup
1/2 cup marshmallow cream
2 cups (more or less) powdered sugar

Combine the first three ingredients and begin working in the powdered sugar. As it becomes to thick to stir begin kneading in the rest of the sugar until you have a workable dough.

I find this dough to be a little strong on almond flavor. Mixing it with fondant made the dough whiter and also the flavor was much more to my liking.

You can mold this dough using the silicone molds or candy molds. Just chill the item before trying to remove it from the mold. i.e. houses and nuts, The house molds and part of the nut molds were purchased from International Sugar Art Company.

Free hand modeling can be done by simply adding more powdered sugar to the dough until it is firm but not dry.
Any cutter you have on hand can be used for cutting out leaves, stars, lettering and etc. I had a nativity bar on my card printing software and increased the size of that bar (pattern) and cut that out for the nativity cake. Then I simply laid those pattern pieces on the rolled out marzipan to create those silhouette figures. I tried to keep these cakes challenging, fun and hopefully not to complicated. Enjoy

Fall leaves before coloring

These leaves are in the natural color of the marzipan. They have been cut out, veined and dried over crunched foil. After the leaves were dry they were dusted with edible dusting powders.

Marzipan bears These darling little bears and apples are hand molded from the marzipan. The basket and small tree stump are molded around marshmallows. For size comparison you can see thetoasted coconut covered marshmallow on the back right end. Tree stump with bears

Nativity Sillouette

Top left - The Poinsettia, pine needles, holly, berries and bow are all made from marzipan.

Top right - a pretty fruit platter of marzipan fruit, nuts and star cut outs dipped in chocolate.

Left - Black sillouette cut outs, stars and letters are all cut outs of marzipan. The stars and cut outs are then brushed lightly with piping gel and edible glitter.

Above is the parts and pieces of this Merry Christmas cake that were molded and formed from marzipan and then allowed to dry.

They were then accented with royal icing and powdered sugar to suggest the winter snow scene.
Marzipan fruit and veggies
Just a few fun little items that are easy to make with the marzipan. The potatoes are simply formed by hand, use a toothpick to make a few eye holes and roll them in cocoa.
Marshmallow baskets What a fun little treat for a Thanksgiving or Christmas luncheon. Tiny apples and the basketweave sides are done from a mold by Sugar Bouquets.
Marzipan Veggies
80 years old and his one hobby had been his garden. Therefore the marzipan vegetables seemed to be the most appropriate decoration for his cake.
